Sichuan cuisine is always prepared with a wide variety of ingredients presenting various shapes and tastes. Sichuan dishes also pay much attention to flavors.

Thirdly, Sichuan cuisine is famous for the huge variety kinds of tastes. The most outstanding ones are of fish, spice homemade, pepper oil, and strange flavors among more than 20 formulas.
 
Fourthly, the numerous cooking techniques, such as stir frying, frying, stir-frying before stewing, and braising. It is particularly typical of the methods of cooking that a dish is done in single pot over strong flames, while the sauce is timely made, with no needs of precooking in oil or pot changing. In addition, there are some advanced cooking techniques for soup.
